Asparagus Sandwich ft. Simon from Vegane Fleischerei Berlin

  • 8 fresh asparagus
  • 1 small onion
  • 1 garlic clove
  • Parsley 
  • Salt and pepper
  • 2 Neggst Patties
  • 1 Planted Schnitzel
  • Oil
  • 1 ciabatta 

Cook 8 asparagus until tender. Separate the tips from the stems. Sauté the asparagus tips with chopped onion and garlic until nicely browned. Blend the asparagus stems with salt, pepper, parsley until a smooth cream. Grill one Planted Schnitzel. Cook 2 Neggst Patties in a pan with a little oil for 4 minutes (2 per side). Warm a ciabatta and assemble: asparagus cream on the bottom, Planted Schnitzel, a bit more cream, the sautéed asparagus mix, the two Neggst Patties, and the top bun with another touch of asparagus cream. Secure with two toothpicks and enjoy!
